GFCFSF - Chocolate chip banana oatmeal cups

Forget what the kids think... I give this recipe a 10 out of 10! Yum!

This recipe was given to me by the mom of one of the kids I treat. I loved the taste and consistency of these oatmeal cups. They are very filling and definitely satisfy a sweet crave. Here is the video of the original recipe in the YouTube channel Clean & Delicious by Dany Spies. I modified the recipe to make it GFCFSF.


Here is my modified recipe. It makes 12 oatmeal cups.


Ingredients

  • 3 cups of Bob's Red Mill gluten free quick cooking oats(I buy it in Publix), or any other GF oats brand.

  • 2 Teaspoons of baking powder

  • 1/2 Teaspoon of Cinnamon

  • 1/2 Teaspoon of Cinnamon sugar

  • 1/3 Teaspoon of ground nutmeg

  • 1/2 Teaspoon of salt

  • 3 medium ripe bananas / 2 if they are big

  • 2 eggs

  • 11/2 cups of unsweetened cashew milk (or any other CF milk)

  • Enjoy life mini chocolate chips

  • Fresh blueberries (optional)


This cups are extremely easy to put together...

  1. Heat up oven to 350F

  2. In a large bowl, add and mix all dry ingredients: The oats, baking powder, cinnamon, cinnamon sugar, ground nutmeg and salt. Put them aside

  3. Grab a blender and blend all the wet ingredients together: the milk, the eggs and the bananas.

  4. Add the blended wet ingredients to your mixed dry ingredients and gently mix them together.

  5. Spray a cupcake tray with spray coconut oil (other oils will work as well) or you can just use baking cups.

  6. Fill the cup with the batter and evenly divide it between the 12 cupcake cups.

  7. Sprinkle mini chocolate chips on top of each cupcake, and I added a few fresh blueberries as well.

  8. Put the tray in the oven for 25 minutes. Let them get a nice gold color on top.

  9. Take the tray out of the oven and let it cool down a little bit.

These cups are to die for when they are just taken out of the oven! D E L I C I O U S! You can storage them in the refrigerator and just pop them up for a few seconds in the microwave before eating them, or in the toaster oven.

Great for snack time or a quick breakfast, and super nutritious!

Let me know what you think. Dylan gave them a 9 out of 10! He says that to be a 10, they had to be as good as his favorite cookies. The boy loves cookies too much!
